Our dough is crafted the old-world way, starting with a 24-hour Italian biga that develops depth, aroma, and structure. We blend carefully selected Italian flours and allow the dough to ferment slowly for up to 72 hours, creating a light, airy crust that’s full of flavor and easy to digest.
Each pizza is fired at nearly 800°F, locking in texture and taste in under two minutes. The result is a golden, blistered crust with true Italian soul — Old World style, New World flavor.
